When you think of Silvaner, you first think of Franconia and the classic Bocksbeutel. However, Jens Windisch shows us that there is also an excellent choice of Silvaner to be found in Rhine-Hessen.
From 2006 onwards, Jens Windisch radically altered the whole system at his parents’ farm (which includes arable and livestock farming in addition to viticulture).
He attaches great importance to the care of the vineyard, does not use any pesticides and herbicides, and relies on selective hand picking.
This local Silvaner comes from the Mommenheim silver mine and Selzen Osterberg areas. The rich marl soil with its high lime content creates ideal conditions for this Silvaner interpretation.
Fortified in stainless steel and 600 litre half-barrels, the wine ferments spontaneously, and remains on the yeast for five months before being gently filtered and bottled late.
This Silvaner is a fun wine! With its herb and citrus notes and fine acidity, this spicy, mineral wine is the perfect accompaniment to asparagus and fish dishes, or a crispy salad.
